Panela is made using a centuries old process that begins by crushing hand-cut sugar cane to extract the natural juice. This juice is heated in a large vat over a fire until it's reduced into a thick syrup. The syrup is then hand-stirred using wooden paddles until it cools, forming the little golden granules of sugar known as panela. Unlike other sugars claimed as "raw", panela is the real deal. Due to it's hand crafted process and lack of refinement, it contains all of sugar cane's natural molasses, giving panela the rich flavors it's known for. These subtle complex flavors often vary with the climate and region that the sugar was grown in. You won't find this with brown sugars such as turbinado or demerara. These sugars are refined in an industrial centrifuge to strip out most of sugar cane's natural molasses (similar to white sugar)- and with it, all the rich subtleties inherent to the sugar cane. Depending on the type of sugar, they'll either leave a tiny bit in for color, or spray some molasses back on at the end of the process. Panela, however, doesn't do any of that. Its raw unrefined sweetness lends itself well to many culinary applications. From mojitos to granola to simply adding it to your coffee in the morning, the possibilities of panela are endless.

Can You Say Pa-ne-YA!?
I went vegan two years ago and, ever since, I’ve really gotten into playing around with creative baking recipes. I tend to consider myself on the picky side when it comes to ingredients (high quality, honest company, local producers if, possible...you get the drift). When it came to sugar, I'd always bought Sugar in the Raw. But then my friend told me that Sugar in the Raw IS.NOT.RAW.SUGAR. (for real. look it up, people!!). So I did my research and was SO happy to find this stuff! And this is GOOD stuff! Had two cute brown bags of it delivered right to my door, and opened one to that nostalgic smell of molasses cookies—unrefined, REAL sugar. I’ve been using it for all my baking, substituting it in place of white sugar, and it's been making some really yummy things (a banana bread, a birthday cake for my nephew, my weekly granola...). LOVE.

Great flavor & perfect for gifts!
Loved the texture and flavor of this sugar. I use it mainly in coffee but have also used in place of regular sugar in recipes. I think it's great that it's whole & unrefined, and the size and design of the packaging make it great for gifts too, especially for people who prefer to drink fair-trade coffee!

No es por agua panela
This is good sugar, very similar to American brown sugar. The label says panela but the flavor is nothing like panela in Colombia SA. My wife wanted agua panela and this is not for the drink.

Best Sugar, Hands Down!
I am very glad to have finally tried this Panela sugar. It has elevated my morning oatmeal, transformed sugar cookies and added a new dimension to so much of what I love to cook. If you enjoy a rich and earthy flavor in your sweets, then you will love this sugar. The packaging fits the product so well and makes for gorgeous gift. I highly recommend trying this natural way to add flavor and character to your cooking.

Awesome stuff. I expected it to be like sugar in the raw, but it actually tastes a lot better. Super good in coffee, better than any other sugar or sweetener I've tried. All around good product, will definitely order again.

Good in goods and oatmeal
This is some of the best tasting sugar around! I've started putting it into all my baked goods, and my husband says they've never tasted better! Haven't been able to find panela this good anywhere else. PS Good in oatmeal too.

AMAZING!! I put this stuff in my coffee every single morning and it is SO good. You can taste how it is just PURE, NATURAL sugar!! Can't find this quality in my local stores.
